Fancy Popsicles

4 delicious ice-cream recipes!

I did not actually know, that you can freeze alcohol, but it turns out you can, to a certain amount. Since Campari Orange has always been my favorite summer drink, I decided to turn the drink into popsicles.

Campari Popsicles:

1 cup sugar
1 cup water
3 cups orange juice
1/2 lemon, juiced
1/2 cup Campari

Mix the water and sugar together, bring to boil until the sugar dissolves. Allow the syrup to boil for 4 minutes & remove from heat and let cool down.
Mix the orange juice and Campari and add 1 cup of the cooled syrup. Pour liquid into molds and let freeze overnight.

Now I was in the mood;-) Mixed up a mojito and filled the cocktail into little plastic cups.

Mojito Popsicles:

1 cup mint leaves
1 cup water
1 cup (fresh) lime juice
1 cup superfine sugar
1/3 cup white rum (I used Bacardi)

Mix all ingredients (in a blender until smooth). Skim off any foam, then pour the mixture into molds. Freeze for an hour, then insert the popsicle sticks.Freeze overnight.

Then I tried a twist on the mojito popsicles and added some yogurt to make

Frozen Yogurt Mojito Popsicles:

greek/plain yogurt

Just add some yogurt to the mix.

Basic Ice Cream (without a machine)

1 1/2 cups whole milk
2 large eggs
3/4 cup sugar
1 vanilla bean, split and scraped, or 1 teaspoon pure vanilla extract
1 1/2 cups heavy cream

Read the how to here.

The popsicle molds are from Silikomart. The also have other cute shapes like hearts and chocolate bars…

To fancy them up a little, you can add rosemary (fits perfect with orange) or red current or anything you can imagine.

Have a great start in the new week!

  13. Where are those lovely lolly makers from? I’ve never seen flat ones like that…though we don’t have many options in England anyway. Perhaps there’s not enough sun. But I cant get enough of making lollies! :)
