Those who follow me on Facebook already now, that there would be a giveaway- and here it is! It’s for my foodie (-and non foodie) friends, a beautiful cookbook with lovely photographs and yummy recipes.

  3. What’s a summer without cocktails, right? I love making Caipirinhas! Whether it be strawberry, raspberry, mango or passion fruit. I like them all! Cheers!

  4. This is my “go-to” favorite. I call it Lemon pasta with parmesan and shrimp. It takes as long as the pasta takes to cook and tastes amazing! Tart from the lemon, salty from the parm and for a kick of heat I always add a pinch (or two) of red pepper flakes when cooking the shrimp. I like to use some form of spaghetti noodles but any shape can be used and you can omit shrimp and add chicken or some other seafood, whatever you like. I like using the shrimp as it’s light for summer.

    Pasta (any shape you like)
    Parmesan cheese, (I use shredded)
    Shrimp (I use raw, frozen shrimp, cleaned w/shell on)
    Lemons (about 2 or 3 depending on size)
    Garlic, 1 clove (I use the already chopped variety)
    Olive oil
    Red pepper flakes
    1 or 2 ladels of pasta water (approx. 1 to 2 cups)

    Boil water for pasta. While water is coming to a boil zest & juice 2 Medium size lemons. Prep your shrimp if it needs to be peeled. Drop your pasta. While waiting for pasta to cook, in a Large skillet or Wok style pan, heat up Olive oil. When heated add garlic and Red Pepper Flakes, saute for minute but don’t burn the garlic, then add your shrimp. The pasta and shrimp should be cooked right about the same time. Add Lemon zest & juice to the shrimp. Drain pasta, reserving pasta water. Put the pasta into the shrimp pan and toss. Add parmesan cheese and toss again. Add pasta water, as needed, to loosen up the parmesan cheese and create a nice sauce. Voila! The most amazing Lemon pasta w/Shrimp and parmesan you’ll ever eat! Serve with salad and Garlic Bread.

    Nudeln mit Pinienkerne und Ricottakäse

    Pinienkerne mit dem großen Messer klein hacken – paar ganze dürfen auch dabei sein
    4 Knoblauchzehen und 1 rote Chillischote gehackt dazu und alles in Olivenöl anbraten
    – nicht zu braun werden lassen-
    1 Schale Coctailtomaten vierteln und untermischen
    2 Becher Ricottakäse dazu geben – alles vermischen – zum Schluß frischer Basilikum drauf
    unter Nudeln mischen

  20. Fabolous giveaway!!

    Here’s one of my favourite summer refreshing drink recipie:
    1 kilogram sugar
    1 liter water
    10-12 fresh lavender flowers (or a level tablespoon dried)
    a big bunch of mint
    1-2 lemon’s juice
    Put the water and the sugar in a saucepan with a thick bottom. Cook for 25-30 minutes about. Turn off the flame and add the lavender flowers, the mint leaf and the lemon’s juice. Let rest until it cools down. Filter the syrup and cook until it boils again. Transfer into glass jars. Keep for 6 months.

  22. The thing I can’t wait for every year is the rasberries in the shops. I love to eat them just like they are…nothing else needed. This year especially I can’t wait for my strawberries, currants, rocket, carrots, spring onions, cucumbers, tomatoes and beans from our Balkony garden to make salads and and desserts….

  23. I love to make the new skinny margaritas for the summertime. They are delicious with a recipe I got for chicken luciano with grilled chicken, tomato and fresh mozzarella. My daughter’s school had a fiesta last week and I could have used a few new recipes other than my tried-and-true rice and beans.

  35. I have a lovely shrimp recipe, that never fails
    Butter
    Red pepper flakes
    Juice of one lemon
    Parsley
    2 or 3 garlic cloves
    put in blender and pulse a couple times
    lay frozen shrimp out on cookie sheet
    take above and glop all over pan
    cook until pink Divine!!

  36. My favorite recipe this summer is this Vegetarian Bean and Rice Burrito Recipe:

    Ingredients

    2 cups leftover pre-cooked rice
    juice from 2 limes
    2 tbsp chopped fresh cilantro
    1/2 onion, diced
    3-4 cloves garlic, minced
    2 tbsp vegetable oil
    1 15 ounce can black beans
    1/2 onion, diced
    1 tbsp chili powder
    1/2 tsp cumin
    1 tbsp hot sauce, or to taste
    4-6 flour tortillas

    Preparation

    In a large bowl, toss together the fresh cilantro with the rice and drizzle with lime juice. Heat in the microwave on on the stove just until hot.

    In a separate large skillet, sautee the onion and garlic in olive oil for 2 – 3 minutes, or until onion is soft.

    Reduce heat to medium low and add black beans and remaining ingredients (except flour tortillas). Stir to combine, and allow to cook until heated through, about 5 minutes.

    Spoon rice and beans onto flour tortillas, and add any additional toppings you want, such as vegan cheese, salsa, avocado slices, black olives or non-dairy sour cream. Wrap your bean and rice burritos and serve hot.

  39. I’ve been drinking a lot of fresh squeezed lemonade this summer, I’ve also tried it with mint and lime mixed in, and plan to do strawberries next.
